Moist Chocolate Cake

INGREDIENTS

  • 220 g all-purpose flour

  • 400 g granulated sugar

  • 90 g cocoa powder

  • 10 g baking soda

  • 5 g baking powder

  • 5 g salt

  • 10 ml vanilla extract

  • 100 g eggs (liquid)

  • 240 ml milk

  • 5 ml vinegar

  • 240 ml hot water

  • 120 ml vegetable oil (canola or sunflower)

All ingredients should be at room temperature for the best results.

INSTRUCTIONS

  • Preheat the oven to 160°C (320°F). Grease and flour two 22 cm (9-inch) round pans or line them with parchment paper.

  • Mix dry ingredients:
    In a large bowl, sift together the flour, sugar, cocoa powder, baking soda, baking powder, and salt. Mix until well combined.

  • Prepare liquid mixture:
    Combine the vinegar with the milk and let it sit for a few minutes.

  • Combine ingredients:
    Add the eggs and the liquid ingredients (warm water, oil, milk-vinegar mixture, and vanilla extract) to the dry ingredients.
    Beat at medium speed until smooth and well combined. Do not overmix.

  • Bake:
    Divide the batter evenly between the prepared pans. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.

  • Cool:
    Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
    Once cooled, frost with your favorite chocolate glaze.
